Ingredients

For the Jacket Potatoes

  • 2 large baking potatoes (Maris Piper or King Edward)
  • 1 tbsp olive oil
  • 1 tsp salt

Toppings (choose one or mix & match)

  • 50g butter
  • 100g grated cheddar cheese
  • 150g baked beans
  • 100g tuna mayo
  • 2 tbsp sour cream & chives

For the Mixed Salad

  • 100g mixed salad leaves (rocket, spinach, watercress, etc.)
  • ยฝ cucumber, sliced
  • 10 cherry tomatoes, halved
  • ยฝ red onion, finely sliced
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Pinch of salt & pepper

Bake the Potatoes

    Preheat oven to 200ยฐC (180ยฐC fan).

    Wash potatoes, dry thoroughly, then prick with a fork.

  3. Step 3

    Rub with olive oil and salt.

  4. Step 4

    Place directly on the oven rack or a baking tray.

  5. Step 5

    Bake for 1 hrโ€“1 hr 15 mins until skins are crisp and insides fluffy.

Prepare the Salad
