Ingredients
For the Jacket Potatoes
- 2 large baking potatoes (Maris Piper or King Edward)
- 1 tbsp olive oil
- 1 tsp salt
Toppings (choose one or mix & match)
- 50g butter
- 100g grated cheddar cheese
- 150g baked beans
- 100g tuna mayo
- 2 tbsp sour cream & chives
For the Mixed Salad
- 100g mixed salad leaves (rocket, spinach, watercress, etc.)
- ยฝ cucumber, sliced
- 10 cherry tomatoes, halved
- ยฝ red onion, finely sliced
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- Pinch of salt & pepper

Bake the Potatoes

Step 1
Preheat oven to 200ยฐC (180ยฐC fan).

Wash potatoes, dry thoroughly, then prick with a fork.

Rub with olive oil and salt.

Place directly on the oven rack or a baking tray.

Bake for 1 hrโ1 hr 15 mins until skins are crisp and insides fluffy.
