Ingredients

For the Chicken

  • 4 chicken breasts
  • Salt & black pepper
  • 1 tbsp olive oil

For the Sauce

  • 250 g chestnut mushrooms, sliced
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 200 ml double cream
  • 100 ml chicken stock
  • 1 tsp dried thyme

  • Creamy mashed potatoes
  • Steamed green beans or tenderstem broccoli

Prepare the Chicken

    Season chicken generously with salt and pepper.

    Heat olive oil in a large pan and fry chicken for 5โ€“6 minutes per side until golden and cooked through.

    Remove and keep warm.
