Creamy Dijon Chicken with Mushrooms

Ingredients
For the Chicken
- 4 chicken breasts
- Salt & black pepper
- 1 tbsp olive oil
For the Sauce
- 250 g chestnut mushrooms, sliced
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 tbsp Dijon mustard
- 200 ml double cream
- 100 ml chicken stock
- 1 tsp dried thyme

Prepare the Chicken

Season chicken generously with salt and pepper.

Heat olive oil in a large pan and fry chicken for 5โ6 minutes per side until golden and cooked through.
