Dirty Fries are crispy fries loaded with melted cheese, savory toppings, and flavorful sauces for a tasty indulgence.
Ingredients
Base Fries
- 800g frozen or homemade chips (thick-cut or skinny, your choice)
- 2 tbsp vegetable oil
- 1 tsp salt
Toppings
- 150g streaky bacon, chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 red chili, finely sliced (optional, for heat)
- 150g grated cheddar cheese
- 50g grated mozzarella cheese
- 2 spring onions, sliced
- 2 tbsp sour cream
- 2 tbsp BBQ sauce or hot sauce (to taste)
- Fresh coriander or parsley, chopped (for garnish)

Cook the Fries

Step 1
Preheat oven to 220°C (200°C fan).

Spread fries on a baking tray, drizzle with oil, season with salt, and bake for 25–30 minutes until crisp.
Prepare the Toppings

In a frying pan, cook bacon until crisp. Remove and set aside.

In the same pan, sauté onion, garlic, and chili until softened.
Assemble
