Dirty Fries are crispy fries loaded with melted cheese, savory toppings, and flavorful sauces for a tasty indulgence.



 

Ingredients

Base Fries

  • 800g frozen or homemade chips (thick-cut or skinny, your choice)
  • 2 tbsp vegetable oil
  • 1 tsp salt

Toppings

  • 150g streaky bacon, chopped
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 red chili, finely sliced (optional, for heat)
  • 150g grated cheddar cheese
  • 50g grated mozzarella cheese
  • 2 spring onions, sliced
  • 2 tbsp sour cream
  • 2 tbsp BBQ sauce or hot sauce (to taste)
  • Fresh coriander or parsley, chopped (for garnish)

Cook the Fries

    Preheat oven to 220°C (200°C fan).

  2. Step 2

    Spread fries on a baking tray, drizzle with oil, season with salt, and bake for 25–30 minutes until crisp.

Prepare the Toppings

    In a frying pan, cook bacon until crisp. Remove and set aside.

  2. Step 4

    In the same pan, sauté onion, garlic, and chili until softened.

Assemble

    Once fries are cooked, transfer to an ovenproof dish.

    Scatter bacon, onion mix, and half the cheese over the fries.

  3. Step 7

    Return to the oven for 5 minutes until cheese melts.

    Remove from oven and drizzle with sour cream and BBQ/hot sauce.

    Top with remaining cheese, spring onions, and fresh herbs.

Additional Notes

Serve
