Toad in the Hole with Onion Gravy and Steamed Green Beans
Classic British sausages baked in a light, fluffy Yorkshire pudding batter, served with rich onion gravy and steamed green beans. Proper comfort food done right.
Ingredients
For the Toad in the Hole
- 8 pork sausages
- 2 tbsp vegetable oil
For the Yorkshire Batter
- 140g plain flour
- 4 eggs
- 200ml milk
- Pinch of salt
For the Onion Gravy
- 1 tbsp butter
- 1 tbsp olive oil
- 2 onions, thinly sliced
- 1 tbsp plain flour
- 500ml beef stock
- Salt and black pepper, to taste
For the Green Beans
- 300g green beans

Prepare the Batter

Whisk the flour, eggs, milk, and salt into a smooth batter.

Rest for at least 30 minutes if possible.
Start the Sausages

Preheat the oven to 220ยฐC (200ยฐC fan).

Add the oil to a roasting tin and heat in the oven until very hot.

Add the sausages and cook for 10 minutes until starting to colour.
Bake the Toad

Carefully pour the batter around the sausages.

Return to the oven and bake for 25โ30 minutes until risen and golden.
Make the Onion Gravy

Melt the butter and oil in a saucepan.

Add the onions and cook slowly until soft and caramelised.
