Ingredients

For the Chicken Milanese

  • 4 chicken breasts, butterflied and flattened
  • Salt and black pepper, to taste
  • 75g plain flour
  • 2 eggs, beaten
  • 100g breadcrumbs (panko or fine)
  • Vegetable oil, for frying

For the Rocket & Parmesan Salad

  • 100g rocket leaves
  • 50g parmesan, shaved
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • Black pepper, to taste

To Serve

  • Lemon wedges
