One-Pan Cajun Chicken & Rice: crisp, lively American flavours, no heavy lifting.



 

Ingredients

For the Chicken

  • 4 chicken thighs or breasts, boneless & skinless
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning (store-bought or homemade)
  • 1 tsp smoked paprika
  • ยฝ tsp salt
  • ยฝ tsp black pepper

For the Rice

  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 300g long grain rice
  • 600ml chicken stock
  • 1 tsp Cajun seasoning
  • ยฝ tsp chili flakes (optional, for heat)
  • 100g frozen peas (optional)

Garnish

  • Fresh parsley, chopped
  • Lemon wedges

Season the Chicken

    Rub chicken with olive oil, Cajun seasoning, paprika, salt, and pepper.

  2. Step 2

    Heat a large pan over medium-high heat. Sear chicken 3โ€“4 minutes per side until golden. Remove and set aside.

Cook the Base

    In the same pan, add onion, red pepper, and garlic. Sautรฉ for 5 minutes until softened.

  2. Step 4

    Stir in rice, Cajun seasoning, and chili flakes. Cook for 1 minute to toast the rice.

Simmer

    Pour in chicken stock. Stir well and bring to a boil.

    Nestle the seared chicken back into the rice.

    Reduce heat to low, cover, and simmer for 20 minutes until rice is tender and chicken is cooked through.

    Stir in peas (if using) during the last 5 minutes of cooking.
