A rustic French-inspired traybake featuring juicy chicken, tomatoes, olives, garlic, and herbs de Provence. Simple preparation, bold Mediterranean flavours, and minimal washing up.



 

Ingredients

Main Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • 2 tbsp olive oil
  • 1 red onion, cut into wedges
  • 1 red pepper, sliced
  • 250g cherry tomatoes
  • 3 garlic cloves, lightly crushed
  • 100g black or green olives, pitted
  • 1 tbsp herbs de Provence
  • Salt and black pepper, to taste
  • Zest of 1 lemon

Optional Extras

  • 1 tbsp capers
  • Fresh thyme or rosemary sprigs
  • A splash of white wine

Prep the Tray

    Preheat the oven to 200°C (180°C fan).

    Place the chicken thighs into a large roasting tray.

Add the Vegetables

    Scatter the red onion, red pepper, cherry tomatoes, garlic, and olives around the chicken.

Season Generously

    Drizzle everything with olive oil.

    Sprinkle over the herbs de Provence, lemon zest, salt, and black pepper.

    Toss lightly to coat, keeping the chicken skin facing up.

Roast

    Roast uncovered for 40–45 minutes until the chicken is golden, crisp-skinned, and cooked through.

    Optional: Add capers or a splash of white wine halfway through cooking.
