For the Chilli Tomato Pasta
- 300g dried pasta (penne or spaghetti)
- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1โ2 tsp chilli flakes (to taste)
- 400g chopped tomatoes
- 1 tbsp tomato purรฉe
- Salt and black pepper, to taste
For the Mixed Green Salad
- Mixed salad leaves
- Cucumber, sliced
- Cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tsp lemon juice or vinegar
- Salt and black pepper, to taste
To Serve
- Grated parmesan or pecorino
