A comforting Mexican-inspired dish featuring spiced beef simmered in a rich tomato sauce, served with fluffy seasoned rice. Simple, satisfying, and packed with bold flavour.



 

Ingredients

For the Mexican Style Beef

  • 500g beef mince
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1/2 tsp dried oregano
  • 400g chopped tomatoes
  • 1 tbsp tomato purรฉe
  • Salt and black pepper, to taste

For the Rice

  • 200g long-grain rice
  • 400ml chicken or beef stock
  • Salt, to taste

To Serve

  • Fresh coriander
  • Sour cream or yogurt (optional)
  • Lime wedges (optional)

Cook the Beef

    Heat the olive oil in a pan over medium heat.

    Add the onion and cook until soft.

  3. Step 4

    Stir in the garlic, cumin, smoked paprika, chilli powder, and oregano.

  4. Step 5

    Add the beef mince and cook until browned.

  5. Step 6

    Stir in the chopped tomatoes and tomato purรฉe.

  6. Step 7

    Season to taste and simmer for 20โ€“25 minutes until rich and thick.

Prepare the Rice

    Place in a saucepan with the stock and salt.

    Bring to the boil, cover, and simmer for 12โ€“15 minutes until tender.
