A rich and comforting soup made with tomatoes, garlic, fresh basil, and pillowy cheese tortellini finished with cream. Warming, indulgent, and perfect for an easy, cosy dinner.

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato purée
  • 800g chopped tomatoes
  • 750ml vegetable or chicken stock
  • 200ml double cream
  • 250g fresh cheese tortellini
  • Salt and black pepper, to taste

To Finish

  • Fresh basil leaves, torn
  • Grated parmesan
  • Crusty bread (optional)

Build the Base

    Heat the olive oil in a large saucepan over medium heat.

    Add the onion and cook until soft and translucent.

    Stir in the garlic and cook for 30 seconds until fragrant.

Tomato Depth
