Sweet Chilli BBQ Sausage Pasta

A bold, comforting pasta dish packed with juicy sausage, sweet chilli heat, and smoky BBQ richness, finished with a creamy sauce that clings to every bite.



 

Ingredients

For the Pasta

  • 350g pasta (penne or fusilli work best)
  • Salt, for the cooking water

For the Sauce

  • 6 pork sausages, skins removed and meat crumbled
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 4 tbsp sweet chilli sauce
  • 3 tbsp BBQ sauce
  • 200ml single cream
  • 1 tsp smoked paprika
  • Black pepper, to taste

To Finish

  • 50g grated cheddar or mozzarella
  • Fresh parsley or spring onions, chopped

Cook the Pasta

    Bring a large pan of salted water to the boil.

    Cook pasta according to packet instructions until al dente.

  3. Step 3

    Drain, reserving a small mug of pasta water.

Cook the Sausage

    Heat olive oil in a large frying pan over medium-high heat.

    Add sausage meat and cook for 5โ€“7 minutes, breaking it up, until browned and cooked through.

Build the Sauce

    Add onion to the pan and cook for 3โ€“4 minutes until softened.

    Stir in garlic and cook for 30 seconds until fragrant.

    Add sweet chilli sauce, BBQ sauce, cream, smoked paprika, and black pepper.

    Simmer gently for 3โ€“4 minutes until slightly thickened.
