A spicy-sweet harissa chicken traybake roasted with colourful veg and potatoes, finished with a cooling lemon-garlic yogurt drizzle.



 

Ingredients

For the Harissa Chicken Traybake

  • 6 chicken thighs (bone-in, skin-on or boneless)
  • 2โ€“3 tbsp harissa paste (rose harissa is great)
  • 2 tbsp olive oil
  • 1 lemon (zest and juice)
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • Black pepper to taste

For the Roasted Veg

  • 1 red onion, cut into wedges
  • 2 bell peppers, sliced thick
  • 2 courgettes, sliced into half-moons
  • 2 carrots, cut into batons
  • 400 g baby potatoes, halved (or chopped)
  • 1 tbsp olive oil
  • Pinch of salt and pepper

For the Yogurt Drizzle

  • 200 g Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 small garlic clove, finely grated
  • Pinch of salt

To Finish

  • Fresh parsley or coriander, chopped
  • Optional: crumbled feta
  • Optional: toasted flaked almonds or pine nuts

    Prep and Roast

Heat the Oven

    Preheat oven to 200ยฐC (180ยฐC fan).

    Line a large baking tray with foil or baking paper for easy cleanup.

Season the Chicken

    Coat the chicken thoroughly in the marinade.

Prepare the Veg
