Harissa Chicken Traybake with Roasted Veg & Yogurt Drizzle
A spicy-sweet harissa chicken traybake roasted with colourful veg and potatoes, finished with a cooling lemon-garlic yogurt drizzle.
Ingredients
For the Harissa Chicken Traybake
- 6 chicken thighs (bone-in, skin-on or boneless)
- 2โ3 tbsp harissa paste (rose harissa is great)
- 2 tbsp olive oil
- 1 lemon (zest and juice)
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- Black pepper to taste
For the Roasted Veg
- 1 red onion, cut into wedges
- 2 bell peppers, sliced thick
- 2 courgettes, sliced into half-moons
- 2 carrots, cut into batons
- 400 g baby potatoes, halved (or chopped)
- 1 tbsp olive oil
- Pinch of salt and pepper
For the Yogurt Drizzle
- 200 g Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 small garlic clove, finely grated
- Pinch of salt
To Finish
- Fresh parsley or coriander, chopped
- Optional: crumbled feta
- Optional: toasted flaked almonds or pine nuts

Season the Chicken
