Cheesy Beef Burritos

Hearty burritos packed with spiced beef, fluffy rice, and loads of melted cheese, wrapped tight and optionally toasted until golden. A proper fakeaway favourite thatโ€™s filling, cheesy, and ridiculously satisfying.



 

Ingredients

For the Cheesy Beef Filling

  • 500g beef mince
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 2 tbsp tomato purรฉe
  • 150ml beef or chicken stock
  • Salt and black pepper, to taste

For the Rice

  • 200g long-grain rice
  • 400ml water or stock
  • Salt, to taste

To Assemble

  • 8 large flour tortillas
  • 200g grated cheddar or Mexican-style cheese
  • 1 tin black beans, drained and rinsed (optional)
  • 1 tin sweetcorn, drained (optional)

To Serve

  • Sour cream or yogurt
  • Salsa
  • Fresh coriander
  • Lime wedges

    Cooking Instructions

Cook the Rice

    Rinse the rice under cold water.

  2. Step 3

    Add to a saucepan with water or stock and a pinch of salt.

  3. Step 4

    Bring to the boil, cover, and simmer for 12โ€“15 minutes until tender.

    Rest off the heat for 5 minutes, then fluff.

Brown the Beef

    Heat the olive oil in a pan over medium-high heat.

    Add the onion and cook until soft.

  3. Step 8

    Stir in the garlic, cumin, smoked paprika, and chilli powder for 30 seconds.

    Add the beef mince and cook until browned.

Make it Saucy

    Stir in the tomato purรฉe, then pour in the stock.

    Simmer for 8โ€“10 minutes until thick and glossy.

    Season to taste.

    Add a layer of rice, then the beef filling, cheese, and optional beans/sweetcorn.

    Fold in the sides and roll tightly into burritos.
