Cheesy Beef Burritos
Hearty burritos packed with spiced beef, fluffy rice, and loads of melted cheese, wrapped tight and optionally toasted until golden. A proper fakeaway favourite thatโs filling, cheesy, and ridiculously satisfying.
Ingredients
For the Cheesy Beef Filling
- 500g beef mince
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chilli powder
- 2 tbsp tomato purรฉe
- 150ml beef or chicken stock
- Salt and black pepper, to taste
For the Rice
- 200g long-grain rice
- 400ml water or stock
- Salt, to taste
To Assemble
- 8 large flour tortillas
- 200g grated cheddar or Mexican-style cheese
- 1 tin black beans, drained and rinsed (optional)
- 1 tin sweetcorn, drained (optional)
To Serve
- Sour cream or yogurt
- Salsa
- Fresh coriander
- Lime wedges

Cooking Instructions
Cook the Rice

Rinse the rice under cold water.

Add to a saucepan with water or stock and a pinch of salt.

Bring to the boil, cover, and simmer for 12โ15 minutes until tender.

Rest off the heat for 5 minutes, then fluff.
Brown the Beef

Heat the olive oil in a pan over medium-high heat.

Add the onion and cook until soft.

Stir in the garlic, cumin, smoked paprika, and chilli powder for 30 seconds.
