- 1kg chicken thighs (bone-in, skin-on for best results)
- 800g potatoes, cut into chunky wedges
- 4 cloves garlic, crushed
- Juice of 2 lemons
- Zest of 1 lemon
- 80ml olive oil
- 150ml chicken stock
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- Salt & black pepper, to taste
To Finish
- Fresh oregano or parsley, chopped
- Extra lemon wedges

Build the Marinade
