A classic Greek-inspired one-pan roast with juicy lemon-marinated chicken and crispy potatoes, infused with garlic, oregano, and olive oil. Simple, rustic, and full of Mediterranean flavour.



 

Ingredients

Main Ingredients

  • 1kg chicken thighs (bone-in, skin-on for best results)
  • 800g potatoes, cut into chunky wedges
  • 4 cloves garlic, crushed
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 80ml olive oil
  • 150ml chicken stock
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt & black pepper, to taste

To Finish

  • Fresh oregano or parsley, chopped
  • Extra lemon wedges

Heat the Oven

Build the Marinade

    In a large bowl, whisk olive oil, lemon juice, zest, garlic, oregano, thyme, paprika, salt, and pepper

Coat Everything

    Add chicken and potatoes to the bowl

Arrange the Tray

    Pour chicken stock into the tray (not over the skin)

Roast
