Creamy Tuscan Chicken with Spinach & Sun-Dried Tomatoes

A rich and comforting Italian-inspired chicken dish cooked in a creamy garlic Parmesan sauce with sun-dried tomatoes and fresh spinach. Perfect for an indulgent weeknight dinner or an impressive but easy weekend meal.



 

Ingredients

For the Chicken

  • 4 chicken breasts
  • Salt & black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

For the Sauce

  • 3 garlic cloves, finely chopped
  • 150 g sun-dried tomatoes, sliced
  • 200 ml double cream
  • 50 g grated Parmesan
  • 150 g fresh spinach
  • 1 tsp paprika
  • 100 ml chicken stock

To Serve (Optional Pairings)

  • Tagliatelle, mashed potatoes, or crusty bread
  • Side salad or garlic green beans

Prepare the Chicken

    Season the chicken breasts with salt, pepper, and Italian seasoning.

    Heat olive oil in a large pan over medium heat.

    Fry chicken for 5โ€“6 minutes per side until golden and cooked through.

Build the Sauce
