A fiery Italian-inspired pasta dish featuring crispy bacon and penne tossed in a punchy tomato and chilli arrabbiata sauce. Simple, bold, and full of attitude.



 

Ingredients

Main Ingredients

  • 200g smoked bacon lardons or streaky bacon, chopped
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1–2 tsp chilli flakes (to taste)
  • 400g chopped tomatoes
  • 2 tbsp tomato purée
  • 300g penne pasta
  • Salt and black pepper, to taste

To Finish

  • Grated parmesan or pecorino
  • Fresh parsley or basil (optional)

Cook the Bacon

    Heat the olive oil in a large pan over medium heat.

    Add the bacon and cook until crisp and golden.

  3. Step 4

    Remove and set aside, leaving the fat in the pan.

Build the Sauce

    Add the onion to the pan and cook until soft.

    Stir in the garlic and chilli flakes and cook briefly until fragrant.

Simmer

    Stir in the chopped tomatoes and tomato purée.

    Season with salt and pepper.

    Simmer for 12–15 minutes until thick and punchy.

Cook the Pasta

    Cook the penne in well-salted boiling water according to packet instructions.

    Drain, reserving a little pasta water.

Combine & Serve

    Toss the pasta through the sauce, loosening with a splash of pasta water if needed.

    Serve hot with grated cheese and herbs.
