- 600g chicken thighs or breasts, chopped
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 red onion, cut into wedges
- 1 tin pineapple chunks, drained (reserve juice)
For the Glaze
- 3 tbsp soy sauce
- 2 tbsp honey or brown sugar
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- 2 tbsp reserved pineapple juice
- 1 tbsp vegetable oil
To Finish
- Spring onions, sliced
- Sesame seeds (optional)

Add the chicken, peppers, red onion, and pineapple to a large roasting tray.
Make the Glaze
