Juicy chicken roasted with sweet pineapple, peppers, and a sticky soy-garlic glaze. A simple one-tray bake balancing sweet and savoury flavours with minimal effort.



 

Ingredients

Main Ingredients

  • 600g chicken thighs or breasts, chopped
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 red onion, cut into wedges
  • 1 tin pineapple chunks, drained (reserve juice)

For the Glaze

  • 3 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp reserved pineapple juice
  • 1 tbsp vegetable oil

To Finish

  • Spring onions, sliced
  • Sesame seeds (optional)

Prepare the Tray

    Preheat the oven to 200ยฐC (180ยฐC fan).

    Add the chicken, peppers, red onion, and pineapple to a large roasting tray.

Make the Glaze

    Mix the soy sauce, honey or sugar, garlic, ginger, pineapple juice, and vegetable oil.

Coat & Bake
