Sausage & Peppers Polenta

Hearty Italian-inspired sausages and peppers simmered in a rich tomato sauce, served over creamy polenta. Comforting, rustic, and packed with bold flavour.



 

Ingredients

For the Sausage & Peppers

  • 6 pork sausages
  • 1 tbsp olive oil
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes (optional)
  • 400g chopped tomatoes
  • Salt and black pepper, to taste

For the Polenta

  • 150g quick-cook polenta
  • 600ml vegetable or chicken stock
  • 30g butter
  • 50g grated parmesan
  • Salt and black pepper, to taste

Brown the Sausages

    Heat the olive oil in a large pan over medium heat.

  2. Step 3

    Brown the sausages on all sides, then remove and slice thickly.

Cook the Peppers

    In the same pan, add the onion and peppers and cook until softened.

  2. Step 5

    Stir in the garlic, oregano, and chilli flakes if using.

Simmer the Sauce

    Return the sausages to the pan.

    Add the chopped tomatoes, season, and simmer gently for 20โ€“25 minutes until rich.

Make the Polenta

    Bring the stock to a simmer in a saucepan.

  2. Step 9

    Gradually whisk in the polenta and cook according to packet instructions, stirring often.

  3. Step 10

    Stir in the butter and parmesan and season to taste.
