A classic Thai street-food dish made with minced chicken stir-fried with garlic, chillies, and fragrant basil in a savoury, spicy sauce. Fast, fiery, and incredibly satisfying.



 

Ingredients

Main Ingredients

  • 600g minced chicken
  • 2 tbsp vegetable oil
  • 4 garlic cloves, finely chopped
  • 2โ€“3 red chillies, finely chopped (to taste)
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 2 tbsp water or chicken stock
  • 1 large handful fresh basil leaves (Thai basil if possible)

Optional Extras

  • Fried eggs, to serve
  • Steamed jasmine rice

Heat the Wok

    Heat a wok or large frying pan over high heat until very hot.

    Add the oil and swirl to coat.

    Add the garlic and chillies and stir-fry for 10โ€“15 seconds until fragrant (do not burn).

Cook the Chicken

    Add the minced chicken and spread it out in the pan.

    Stir-fry for 3โ€“4 minutes, breaking it up, until cooked through.

Season the Sauce

    Add oyster sauce, light soy, dark soy, sugar, and water or stock.

    Toss well and cook for 1โ€“2 minutes until glossy and slightly saucy.

Finish with Basil
