Basil Chicken (Pad Krapow)
A classic Thai street-food dish made with minced chicken stir-fried with garlic, chillies, and fragrant basil in a savoury, spicy sauce. Fast, fiery, and incredibly satisfying.

Main Ingredients
- 600g minced chicken
- 2 tbsp vegetable oil
- 4 garlic cloves, finely chopped
- 2โ3 red chillies, finely chopped (to taste)
- 2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 2 tbsp water or chicken stock
- 1 large handful fresh basil leaves (Thai basil if possible)
Optional Extras
- Fried eggs, to serve
- Steamed jasmine rice

Heat the Wok

Heat a wok or large frying pan over high heat until very hot.

Add the oil and swirl to coat.

Add the garlic and chillies and stir-fry for 10โ15 seconds until fragrant (do not burn).
Cook the Chicken

Add the minced chicken and spread it out in the pan.

Stir-fry for 3โ4 minutes, breaking it up, until cooked through.
Season the Sauce

Add oyster sauce, light soy, dark soy, sugar, and water or stock.

Toss well and cook for 1โ2 minutes until glossy and slightly saucy.

Serve immediately over hot jasmine rice, topped with a fried egg if desired.
