A quick and comforting pasta dish featuring golden chicken in a rich, garlicky cream sauce finished with parmesan. Simple, satisfying, and perfect for an easy midweek dinner.

Main Ingredients

  • 600g chicken breast or thighs, sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 garlic cloves, minced
  • 300g pasta (penne or tagliatelle)
  • 250ml double cream
  • 50g grated parmesan
  • Salt and black pepper, to taste

Optional Extras

  • 1 tsp chilli flakes
  • 100g spinach
  • Fresh parsley, chopped

Cook the Pasta

    Cook the pasta in well-salted boiling water according to packet instructions.

    Reserve a little pasta water, then drain.

Cook the Chicken

    Heat the olive oil in a large pan over medium-high heat.

    Season the chicken with salt and pepper.

    Cook for 6โ€“8 minutes until golden and cooked through, then remove and set aside.

Garlic Butter Base

    Stir in the garlic (and chilli flakes if using) and cook for 30 seconds until fragrant.
