A hearty, flavour-packed dish combining spiced beef nachos with fluffy seasoned rice. Loaded with melted cheese, crunchy tortilla chips, and classic toppings โ€” perfect for big appetites.



 

Ingredients

For the Beef Nachos

  • 500g beef mince
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chilli powder
  • 2 tbsp tomato purรฉe
  • Salt and black pepper, to taste
  • Tortilla chips
  • 200g grated cheddar or Mexican-style cheese

For the Rice

  • 200g long-grain rice
  • 400ml beef or chicken stock
  • 1/2 tsp ground cumin
  • Salt, to taste

To Serve

  • Jalapeรฑos
  • Spring onions, sliced
  • Fresh coriander
  • Sour cream or yogurt

Cook the Beef

    Heat the olive oil in a pan over medium heat.

    Add the onion and cook until soft.

  3. Step 4

    Stir in the garlic, smoked paprika, cumin, and chilli powder.

    Add the beef mince and cook until browned.

    Stir in the tomato purรฉe and season to taste.

    Simmer gently for 10 minutes.

Prepare the Rice

    Rinse the rice under cold water.

    Place in a saucepan with the stock, cumin, and salt.

    Bring to the boil, then cover and simmer for 12โ€“15 minutes until tender.

Assemble the Nachos

    Spread tortilla chips over a baking tray.

    Spoon the beef mixture over the chips and sprinkle with cheese.
