Bold and spicy Jamaican-inspired jerk chicken marinated with aromatic spices and chilli, then roasted or grilled until juicy and charred. Packed with heat, sweetness, and smoky flavour.
Ingredients
For the Jerk Marinade
- 600g chicken thighs or drumsticks
- 2 spring onions, roughly chopped
- 2 garlic cloves
- 1 tbsp grated fresh ginger
- 1โ2 red chillies (to taste)
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1 tsp dried thyme
- 2 tbsp soy sauce
- 1 tbsp brown sugar or honey
- Juice of 1 lime
- 1 tbsp vegetable oil
- Salt and black pepper, to taste
To Serve (Optional)
- Rice and peas
- Lime wedges

Make the Marinade

Blend the spring onions, garlic, ginger, chillies, allspice, cinnamon, thyme, soy sauce, sugar, lime juice, and oil into a thick paste.
Marinate the Chicken

Coat the chicken thoroughly in the jerk marinade.

Cover and marinate for at least 1 hour, preferably overnight.
Cook the Chicken

Preheat the oven to 200ยฐC (180ยฐC fan) or prepare a grill.

Roast or grill the chicken for 35โ40 minutes, turning once, until cooked through and lightly charred.
