Bold and spicy Jamaican-inspired jerk chicken marinated with aromatic spices and chilli, then roasted or grilled until juicy and charred. Packed with heat, sweetness, and smoky flavour.



 

Ingredients

For the Jerk Marinade

  • 600g chicken thighs or drumsticks
  • 2 spring onions, roughly chopped
  • 2 garlic cloves
  • 1 tbsp grated fresh ginger
  • 1โ€“2 red chillies (to taste)
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1 tsp dried thyme
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar or honey
  • Juice of 1 lime
  • 1 tbsp vegetable oil
  • Salt and black pepper, to taste

To Serve (Optional)

  • Rice and peas
  • Lime wedges

Make the Marinade

    Blend the spring onions, garlic, ginger, chillies, allspice, cinnamon, thyme, soy sauce, sugar, lime juice, and oil into a thick paste.

Marinate the Chicken

    Coat the chicken thoroughly in the jerk marinade.

    Cover and marinate for at least 1 hour, preferably overnight.

Cook the Chicken

    Roast or grill the chicken for 35โ€“40 minutes, turning once, until cooked through and lightly charred.
