Chicken Chow Mein

- 600g chicken breast or thighs, thinly sliced
- 300g egg noodles
- 2 tbsp vegetable oil
- 1 onion, sliced
- 1 red pepper, sliced
- 100g beansprouts
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
For the Sauce
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp sugar
To Finish
- Spring onions, sliced

Cooking Instructions
Cook the Noodles

Cook the egg noodles according to packet instructions.

Drain well and set aside.
Cook the Chicken

Heat the vegetable oil in a wok or large frying pan over high heat.

Add the chicken and stir-fry for 4โ5 minutes until cooked through and lightly golden.

Stir-Fry the Vegetables

In the same pan, add the onion and red pepper and stir-fry for 2โ3 minutes.

Add the garlic and ginger and cook briefly until fragrant.
