For the Quesadillas
- 8 flour tortillas
- 250g grated cheddar or Mexican-style cheese
- 1 tbsp olive oil or butter
Optional Fillings
- Cooked chicken, sliced
- Fried peppers and onions
- Sweetcorn
- Jalapeรฑos
For the Side Salad
- Mixed salad leaves
- Cherry tomatoes, halved
- Cucumber, sliced
- 1 tbsp olive oil
- 1 tsp lemon juice or vinegar
- Salt and black pepper, to taste
