Crispy golden quesadillas filled with melted cheese and served with a fresh, simple side salad. Quick, satisfying, and endlessly customisable.



 

Ingredients

For the Quesadillas

  • 8 flour tortillas
  • 250g grated cheddar or Mexican-style cheese
  • 1 tbsp olive oil or butter

Optional Fillings

  • Cooked chicken, sliced
  • Fried peppers and onions
  • Sweetcorn
  • Jalapeรฑos

For the Side Salad

  • Mixed salad leaves
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • 1 tbsp olive oil
  • 1 tsp lemon juice or vinegar
  • Salt and black pepper, to taste

Prepare the Salad

    Combine the salad leaves, cherry tomatoes, and cucumber in a bowl.

Assemble the Quesadillas
