One Pot Southwest Chicken & Rice

A bold and comforting one-pot dish made with spiced chicken, rice, beans, and peppers simmered together for maximum flavour with minimal washing up. Perfect for an easy, satisfying weeknight meal.



 

Ingredients

Main Ingredients

  • 600g chicken breast or thighs, diced
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chilli powder
  • 200g long-grain rice
  • 400g chopped tomatoes
  • 500ml chicken stock
  • 200g tinned black beans, drained and rinsed
  • 200g tinned sweetcorn, drained
  • Salt and black pepper, to taste

To Finish

  • Fresh coriander, chopped
  • Lime wedges
  • Sour cream or yogurt (optional)

Brown the Chicken

    Heat the olive oil in a large deep pan or casserole over medium-high heat.

    Add the chicken and cook until lightly golden.

  3. Step 4

    Remove and set aside.

Build the Base

    In the same pan, add the onion and cook until softened.

    Stir in the garlic and red pepper and cook for 1โ€“2 minutes.

Add the Spices & Rice

    Stir in the smoked paprika, cumin, and chilli powder.

    Add the rice and stir well to coat in the spices.

Simmer

    Return the chicken to the pan.

    Add the chopped tomatoes and chicken stock.

    Season with salt and pepper.

    Bring to a gentle simmer, cover, and cook for 18โ€“20 minutes until the rice is tender.
