Cheesy Beef Quesadilla

Golden, crispy tortillas packed with spiced beef and loads of melted cheese. Quick to make, incredibly satisfying, and perfect for a fakeaway night or easy sharing dish.



 

Ingredients

For the Cheesy Beef Filling

  • 500g beef mince
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • Salt and black pepper, to taste

To Assemble

  • 8 flour tortillas
  • 250g grated cheddar or Mexican-style cheese

To Serve (Optional)

  • Sour cream or yogurt
  • Salsa
  • Fresh coriander

Cook the Beef

    Heat the olive oil in a frying pan over medium heat.

    Add the onion and cook until softened.

  3. Step 4

    Stir in the garlic, cumin, smoked paprika, and chilli powder.

    Add the beef mince and cook until browned.

  5. Step 6

    Season to taste and remove from the heat.

Assemble the Quesadillas

    Lay out the tortillas and sprinkle cheese over one half of each.

    Spoon the cooked beef over the cheese, then add a little more cheese on top.

    Fold the tortillas over to enclose the filling.
