Chicken Enchiladas

Soft tortillas filled with tender spiced chicken, baked in a rich tomato enchilada sauce and topped with melted cheese. Comforting, flavour-packed, and perfect for a family dinner.



 

Ingredients

For the Chicken Filling

  • 500g chicken breast or thighs, diced
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • Salt and black pepper, to taste

For the Enchilada Sauce

  • 400g chopped tomatoes
  • 2 tbsp tomato purรฉe
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika

To Assemble

  • 8 flour tortillas
  • 200g grated cheddar or Mexican-style cheese
  • Fresh coriander
  • Sour cream or yogurt (optional)

Cook the Chicken

    Heat the olive oil in a pan over medium heat.

    Add the onion and cook until soft.

  3. Step 4

    Stir in the garlic, cumin, smoked paprika, and chilli powder.

  4. Step 5

    Add the chicken and cook for 6โ€“8 minutes until cooked through.

    Season to taste.

Make the Sauce

Assemble the Enchiladas

    Preheat the oven to 200ยฐC (180ยฐC fan).

    Spoon the chicken filling into the tortillas and roll tightly.

    Place seam-side down in a baking dish.
